How to make sun dried tomatoes so you can preserve your tomato crop this year.

This year I had an amazing crop of tomatoes. AMAZING. I was so pleased. But I'm the only one who really eats tomatoes so I decided to make sun dried tomatoes which are awesome for cooking with. In case you've never made them (this was my first time), here are some simple instructions for dehydrating tomatoes.

Wash and dry your tomatoes.

Cut your tomatoes in thin slices. Sprinkled with salt and basil.

Place on trays in your dehydrator and set the temperature for 140 degrees Fahrenheit. I turned mine after four hours. This should take 8+ hours.

Mine ended up going longer than 8 hours but I just made sure to keep checking on them until I saw they were done- you'll have more or less time depending on how juicy your tomato was. Roma tomatoes are supposed to work best.

These will keep in air tight jars for a while- as long as they are FULLY dehydrated. Moisture = no bueno.
