Amazing Scrambled Eggs

My scrambled egg recipe!

A couple years ago I was having some icky reactions to eggs so I got allergy tested and tested positive. As a result I’ve been avoiding them, with the exception of if there’s only one or two baked into baked goods. I’ve been confused about some of my allergies so I ended up checking with a new allergist who retested me and I’m now negative… yay! So he told me I could go ahead and try to add eggs back into my diet again… although he did warn me that even if it’s not an “allergy” that this didn’t mean I might not have gastro-related issues with eggs. Fortunately, I seem to be good. Not sure what was up before, but I’m happy that I can now eat them again because I LOVE eggs. So expect a lot of egg recipes now.

I’ve been eating scrambled eggs pretty much every day now as a result for my excitement and I even purchased the (gasp) two cartons at Costco. Yeah you know you plan to eat something a lot if you buy it at Costco!

So for yummy scrambled eggs, I scramble together the following:

  • 1/4 tsp Parsley
  • 1/4 c cheddar cheese (could add more)
  • 4 eggs
  • 1/8 tsp garlic powder
  • 1/16 tsp salt (could add more)
  • 1/16 tsp pepper (could add more)
  • Milk
I scramble them and pour them into a pan on medium high heat. I continue to “stir”/scramble them as they cook so they don’t get stuck to the pan. I’m really careful to not overcook them because I hate when they get icky stuck to the pan.

That’s usually enough for G and I for lunch on days that I don’t want to go too crazy making something that takes longer.
