Some recipes that we love.

Just wanted to quickly share what I've got cooking for dinner this week... I decided to try four different Pinterest recipes this week. I'll update and let you know how they turn out, but I'm pretty excited about them. I was sick last week and lost like 7 lbs in one day so I've let my diet go to hell since then... well not completely to hell, but I'm not as much of a stickler about my calories.

Tuesday: Crockpot Beef Stroganoff
Edit: Here's a couple of pictures of the stroganoff. We substituted fat free cream cheese and sour cream which worked out pretty well. It wasn't quite as thick as stroganoff often is, as a result, but very tasty. I wish I'd added mushrooms to it though... I forgot them at the store so I just skipped it. Baby G LOVED this... I've never seen him attack food this way before.

Wednesday: Loaded Potato and Buffalo Chicken Casserole
Edit: Here's a picture. It was pretty tasty... we used bacon bits on top.

Sorry, forgot to take a picture of this one. I liked the recipe, but our pork recipe of course is just pulled pork in the slow cooker.

With a biscuit and some mozzarella salad on the side. The salad is mixed greens, balsamic vinegar, and mozzarella cheese melted on top. Yummy!

Lower Calorie Cupcakes

Also this week, I'm trying to test out my cupcakes for Baby G's birthday. I saw this substitution guide for cake mix on Pinterest to lower the number of calories in the cupcakes so I decided to try it. It's awesome because I don't always have eggs on hand, but I usually have applesauce (Baby G gets his Prevacid in it). Recently I've had diet ginger ale on hand too so I might try that option later. 

Today (August 29, 2012) I tried the applesauce option with half of the box of cupcakes. They're still cooking, but the batter was still tasty... it tastes different than when it's made with eggs, but not bad.  I'm going to test them by giving them to Daddy B and see if he notices the difference. Haha.

Update: Daddy B liked the cupcakes and said he could tell once it was pointed out that they were a little different and sweeter. Downfall of the applesauce option was that my cupcakes were so moist that they didn't stick together very well... they sort of fell apart. Going to have to experiment a bit more.
