How to make amazing homemade Panera inspired broccoli cheese soup with carrots, mushrooms and bacon bits. 

I've been looking for a fabulous broccoli cheese soup recipe because I LOVE it whenever we go out to eat. I decided to try this recipe:

It was fabulous. I liked that it didn't use any canned foods and that everything was fresh. It tasted amazing, particularly with (or maybe in spite of) some of my additions. I'm glad I doubled the recipe so we'll have some leftovers for the next couple of days.

My kids were eh about eating it- they love broccoli, but they will not eat soup, much to my frustration. My 2 year old picked the broccoli out to eat. The 4 year old took half of dinner to even taste a bite. Sigh. I really love stews and soups so it kinda cramps my style that the kids see liquid foods and instantly refuse to eat them. I did grab some saltine crackers and they liked dipping them in there. Someday they'll eat this stuff right?! I mean they like all of the ingredients! 

Recipe Additions and Changes

I doubled the recipe so I had lots of leftovers. I added about a cup of sliced mushrooms and some bacon bits... because... bacon. I didn't have bay leaf so I skipped that. And I used a combo of milk and heavy cream because I didn't have half and half.

Gouda cheese- I didn't have any. I used extra cheddar, a bit of swiss, and a combo shredded cheese that I had in my freezer. Yeah I just threw stuff in there... I have so much shredded cheese in my freezer.

I also used quite a bit more broccoli than was called for and then when I realized I didn't have enough broth for all of the broccoli, I added more chicken broth. Then I ended up adding more cheese- a lot more cheese- at the end because it was pretty thin soup. It worked out, but it still ended up being pretty thin soup. It still tasted delicious so it was fine. The broccoli does shrink down quite a bit once cooked so you can expect much less broccoli in the soup than original appears to be the case.
