How to make this easy recipe for chicken ranch quinoa. This cooks easily in a rice cooker!
I've been trying to make some quinoa recipes as the "word" is that this is healthy and filling. My brother made it for us when we were in Texas and I thought it was decent. I tried making it when we got back, but it was AWFUL. I realized my mistake later- you need to WASH quinoa well before you cook it. Whoops. I have to say it tastes MUCH better now that I know this.
For today's recipe, I had some leftover rotisserie chicken to use. I cut it up into small pieces to mix in the quinoa. The quinoa was all cooked in the rice cooker- super simple. As with anything that I cook without a recipe, I let my husband try it first. Teeheee.... it was great though! My almost 2 year old AND my husband both liked it. My 4 year old refused to try it because he's got a strict "no adult food" policy. Alas, can't please everyone.
- 1 c quinoa, rinsed well
- 3 tbsp of ranch mix
- 2 chicken bouillon cubes
- 2 c water
- Rotisserie chicken: Remove bones, cut the chicken into small pieces
Rinse your quinoa and add it into your rice cooker. Add 3 tbsp of ranch mix, 2 chicken bouillon cubes, and 2 cups of water. Turn your rice cooker on (I set to "white rice," but I'm not sure if it makes a difference). At some point, it would be helpful to stir everything so the bouillon doesn't get stuck to the bottom of the pot. Once the rice cooker is finished, remove the quinoa and mix in the chicken.
