Cake Pops!

Cake Pops: Making cake pops from frozen cake leftover from another birthday party earlier in the month. So yummy and my 1 yr old loved them! Also discussed using chocolate chips as a substitute for the melts if you run out of melts.

I just made cake pops for the first time as we had lots of leftover cake from the boys' combined birthday party. I wanted to make K a little something to celebrate his birthday but we have had cake for Gs birthday, then for the combined birthday party, then for MY birthday... All in less than a month. I needed to mix it up a bit. So cake pops!

I defrosted the cake in fridge and after it was done, I smushed up all the pieces, mixed with a little bit of frosting, and rolled into balls. I placed them on parchment paper in the fridge overnight. 

I followed this tutorial to make the pops:

I didn't have anything to put the cake pops in despite trying to improvise last minute (with first cake pop dripping in one hand)... What I was gonna use didn't work. So I ended up just holding a couple while they got more solid... After adding sprinkles of course. It didn't take too long, then I just placed them back on the parchment paper. My kids really won't care if the cake pop has a flat spot.

I didn't realize how much of the melts I'd need so I made most of the pops but still had three left. I used melted chocolate chips to "frost" the rest. This didn't "dry" as fast so I plopped them upside down on the parchment paper and figured they'd eventually harden. I placed all the pops back in fridge until the next day. The chocolate ones tasted just fine too! No complaints from the kids (or adults).

Now that I've made them, I may never make a real cake again. They're so good. And I'd like to think I ate less calories because I only had one instead of a big piece of cake... but that's probably not true seeing the cake is condensed into a smaller area. Haha. A girl can hope.

Here's some pictures of us celebrating... I wasn't sure if my 1 yr old would be able to bite into them but he sucked on it a bit then gnawed on it. HAPPY KID. Way more interest in this than he had in cake.

We ended up eating on floor because baby cakes had gotten annoyed with being in his high chair. These aren't as neat as one would expect. My awesome guys all doing "cheers" with their cake pops.
